Veggie Quesadilla Wraps

serves 2-4

  • Ingredients:
    • 2 Tbs extra virgin olive oil
    • 1/2 cup sliced onions
    • 1 ts minced or chopped garlic
    • 1cup bell peppers
    • 1cup sliced mushrooms
    • 1ts fajita or taco spices
    • 1ts oregano
    • 1/4 ts salt
    • 1 cup cheddar cheese
    • whole wheat tortilla
    • salsa

Add olive oil in a pan and sauté the onions and garlic together for 2-3 minutes. add the spices. mix well. add the vegetables and cook on medium low heat for 5 minutes. Set aside in a bowl. To assemble the wrap: in a pan on low heat, place a tortilla and add 1/4- 1/2 cup of cheese. Once the cheese melts, add 1/2 cup of the cooked veggies and roll it. Place it on a cutting board and cut in half. Transfer the wrap to a plate and serve next to it your favorite salsa or guacamole.
